Recipe #3 – Bacon and asparagus pappardelle
Right, so it’s Friday night, knackered from the weeks activities and seriously thinking about ordering take-out… but I pull myself together and think of the greater good of a home cooked meal, problem, what to eat… I don’t feel like going to the shops and yet another outing. Solution, scavenge fridge/cupboard contents for ingredients… low and behold, we have a meal in the making!
I have a bit of left over crème fraich and the rest of the fresh asparagus from Recipe #2 and a couple pieces of Bacon lying around, so let see what I can do with those… Bacon and asparagus pappardelle!
Now again, if nothing else this journey of mine is exposing me to ingredients I was previously unaware of, namely, pappardelle, which as Google so delightfully pointed out is a thick cut egg based pasta, similar to tagliatelle.
I’ve not easily been able to locate it (anyone in Cape Town know where to find it?), but I happened to have some tagliatelle on hand, which I thought would be a suitable substitute under the circumstances.
This meal contains a whopping 8 ingredients and REALLY is a 20 minute meal, and is a cinch to whip up and tastes great, there is just something about fresh asparagus and bacon just works so well together (reading that takes me back the animated movie ‘Ratatouille’).
So crisis averted, Mr. Delivery avoided and time to sit in from the the TV and take in a DVD with the Mrs. while our little man catches up on some much needed rest.
