White bean, bacon and tomato soup

I’m a sucker for soups and after an amazing weekend in Cape Town, filled with spring time fare, we decided to settling in for the evening and enjoy this meal.

Some of you guys know I’m a bit of a fan boy for the Nomu Fonds. I mentioned the Vegetable Fond back in the Pea Soup recipe, today I decided to try out their Chicken one in this simple, hearty soup. Again, can’t say enough about this company: great products, great marketing and proudly South African, more specifically, Capetonian.

It is a deceptively simple meal to make, a handful of vegetables and topped off with some smoked bacon and garnished with some fresh chives (out of the vegetable garden of course!), it gets the 20 minute meal thumbs up.

I’ll be honest and share I actually made enough for 4 servings, but we devoured it in 2… yip, THAT good!
