Grilled lemon and herb chicken with mash

What is it about mashed potatoes that is just soooo good, I mean it’s simple enough right? Boil potatoes, mash them, eat them, simple, yet so comforting. These in particular were adorned with corn kernels as well, making me feel like an honorary Southern, if just for a moment.

A true 20 minute meal, and probably the most fun I’ve had in the kitchen in a while. You are quite literally required to use a small saucepan to beat the scored chicken within an inch of its already deceased life. Anger management anyone?

The chicken and mash are covered in a very fresh and refreshing relish made of basil, tomatoes and spring onions, with a good splash of red wine vinegar, giving you a very sweet, yet tangy flavour.

I could see myself knocking this out again: quick to make, tasty to eat and something about it just feels, well, delightful.
