 Warm bacon and lentil salad with crispy croutons

Today’s meal goes out to @PigSpotter, who is currently in the headlines and crosshairs, depending on which side of the fence you are on.

Basically, Cliff, as he is affectionately known, is out to expose cops that are hiding and trapping, this from his Twitter account.

Let’s help each other expose where cops are hiding and trapping daily.

I can see both sides of the argument. I think if officers are acting outside of the law it needs to be exposed and dealt with appropriately, but in the same breath, if this service is being used by folks to escape being punished by the law for breaking it unlawfully and recklessly endangering lives, then it is equally, bad, if not worse…

Either way, you be the judge, I just had it on my mind while cooking up lunch today: a warm bacon and lentil salad with crispy croutons.

Very simple to whip together and definitely 20 minute worthy. Buying mixed greens sure saves in preparation time, and is the tip of the day. Outside of the greens there are only a handful of ingredients.

The textures and taste of the lentils and bacon compliment each other well and I washed it down with a glass of Shiraz, which further added to the enjoyment of an already great meal.

So @PigSpotter this one goes out to you, I’m not sure anyone knows how your story will end, sadly for my little piggy, he wasn’t very lucky, though my tummy feels otherwise.

    I think you’re doing exactly what I’m doing, which is attempting to make many of the recipes in Jamie Oliver’s app. I have been using it since June 2011 and I love it immensely.
