Recipe # 34 – Spicy cod with lemon courgette couscous

Ok, so Cod isn’t sustainably fished in South Africa (indecently the latest SASSI guide is available here) so it was replaced with hake.

A simple 20 minute meal of note, even if you are not the worlds greatest fish lover as hake is a little nondescript, being a ‘white’ fish, which for some is a little easier to palate.

As the name implies the steamed fish is served on a bed of steamed couscous with fried courgettes and onions mixed with ground cumin and topped with a tomato based reduction infused with coriander, garlic and chilli…. just typing that makes me want to relive the experience all over again.

Highly recommended!

    Yeah, it is something I’ve been conscious of for some time and tweeted about it as well, in the plaice recipe I also used west coast sole as a replacement for imported fish.

    I’ve just caught your post on Spatula and watched the ‘End of the line’ trailer, can’t wait to see the movie.
