Recipe #46 - Salmon fish fingers with pea mash

A delicious meal, but is it 20 minute worthy?

The answer I’m afraid, is no, at least not for me. It requires a fair bit of preparation and I overshot a bit, making it more of a 30 minute meal, Hmmm maybe Jamie could offer a series of 30 minute meals… (oh the irony). Jokes aside it really was a fantastic dish and well worth the effort.

In place of salmon I used rainbow trout, which is cheaper, sustainable and just as tasty as its imported Norwegian counterpart.

The real gem in this has to be the sauce. A mix of parsley, onion, mayonnaise, capers and gherkins, most tasty indeed.

Overall a great meal and far healthier/tastier than any store bought fish finger/cake offering could ever hope to be.
