Steamed salmon with tomato basil couscous

Prior to being ‘kitchen-less’ I cooked a meal or 2 in reserve, which I didn’t get around to blogging, so this one is from the proverbial archives.

This dish is amazing, and certainly on my top 10 dishes list. It is deceptively simple to prepare and to my mouth, the perfect blend of both textures and tastes.

Again, as with the other salmon dishes we substituted the salmon for rainbow trout, which is both local and sustainable and equally as tasty as its Norwegian counterpart.

This is one pot cooking at its finest and certainly 20 minute worthy, the added chilli gives it a bite and the tomatoes and basil are just the most magical mates.

Enjoy it with a glass of sauvignon blanc, it will be most memorable indeed.

    Made this last week , a great success. Liked the idea of steaming as i tend to fry the fish and then overcook it..

    Yeah, it is fantastic right? Really hard to screw up steaming fish, alot easier when grilling of baking it!
