Pea & broad bean fritters with salsa

This dish is courtesy of Jamie’s ’10-minute meal’ pack, again, 10 minutes may be a little unrealistic, but in principal it’s an easy dish to whip up, both flavoursome and colorful.
When I think of fritters it conjures up images of deep fried pumpkin, thankfully this dish is less likely to bring on indigestion or heart burn and be a little lighter on the waistline.
Whipping up the batter takes a couple minutes: throw in the milk, baking powder and flower into a bowl, season with salt & pepper, whisk into a batter, toss in the peas and broad beans, add some chopped spring onion, mint leaves and some pecorino.
Divide the batter and pour into an oiled, heated pan, fry em up a couple mins a side until golden.
The salsa has a Mediterranean flair about, gone is the coriander typically associated with salsa, saying ‘hello’ to stoned black olives.
Serve the fritters with a generous portion of the salsa and a side salad, in my case a mixed of multi-leaf lettuces from the garden: red oak, butter and some mustard greens for tang, with a splash of balsamic vinegar.
The ‘Pièce de résistance’ of course is the Parma ham, yes, quite an indulgence, but it just takes the dish to another level, though you could swap this out for a more affordable ham offering, buy the best you can afford.
Hi Matt, this looks really good for summer here – lovely light meal. Broad beans are really in vogue at the moment, it would seem! I’d serve this with a glass of chilled, unwooded Chardonnay and eat it by the pool. Marvellous.

I love to enjoy it with a glass of Haute Cabrière Chardonnay/Pinot Noir, my favourite summer vino and a great pairing, sadly we don’t have a pool, but I can imagine that part, LOL.
Broad Beans are making a come back, Woolies were blowing these freshly picked ones on a ‘Buy One Get One Free’ offer, I couldn’t resist.
